Another of my wonderful homemade
farm recipe, from the 50,s.
It is amazing what a plain old bread dressing from scratch recipe does to a old meatloaf. I mixed a little Catsup w/Balsamic vinegar, and butter to slop on the top. Delish!

Ingredients For meatloaf w/a stuffing stuffed center #2
-
1 mdonion...chopped
-
3/4 cdiced celery
-
3-4 csoft bread cubes...lightly toasted
-
3/4 cwater
-
2 mdeggs beaten...in the above water
-
1 Tbspsalt
-
1/2 lbground pork
-
1-1/2 lbground beef
-
2 Tbspmelted butter f......or the glaze
-
1/2 ccatsup w/ balsmic vinegar, added .....for the glaze.
-
1/4 cwate.......r for the glaze
How To Make meatloaf w/a stuffing stuffed center #2

1Cut up the bread into small squares.
Put onto a cookie tray.
Toast at 350 till lightly crunchy. -
2In a skillet brown chopped celery
and chopped onion in 1/4 cup of butter. -
3In a large bowl mix together
the bread cubes, water,
beaten eggs,and salt.
Mix lightly but wel. -
4Mix together in another bowl
the ground beef with the ground pork. -
5In to a 9x5x3 inch bread pan,
pat half of the meat mixture. -
6Cover this layer of meat
with the mixed dressing.
. -
7Then add the other half of the
meat mixture on top of the dressing. -
8Baste lightly with the mixed catsup glaze.
Bake in a pre-heated 350 oven,
for 1-1/4 hours.
Glazing the top every 1/2 hour.
Slice and serve. -
9This is my revised meatloaf recipe.
