Ingredients For meatloaf pepper boats

1 lbground beef or sausage (i used turkey sausage)

3 lgbell peppers, any color

1/4 cfinely chopped green pepper

1/4 cfinely chopped onion
-
2 tspminced garlic
-
1 Tbspolive oil
-
2 tspdried basil leaves
-
1 tspseasoned salt and pepper
-
1/4 cketchup
-
1egg
-
1 ccooked rice
-
extra ketchup for topping if desired
How To Make meatloaf pepper boats

1Cut bell peppers into halves lengthwise, leaving part of stem on, and scoop out seeds and membranes. Preheat oven to 350°.

2Sauté the onion and pepper in the olive oil for about 2 minutes; add garlic and sauté another 2 minutes.

3Mix the meat, sautéed vegetables, seasonings, ketchup, egg and rice in a medium bowl.

4Mix well and pack into the pepper halves, mounding each one like a meatloaf. Place in a baking dish and bake for 30 minutes. Then apply 2 tablespoons extra ketchup to the top of each pepper boat if desired, and continue baking another 15 minutes.

5Peppers are done when meatloaf reaches internal temperature of 160°.
