My husband hates meatloaf - well he did until I made this (without knowing he hated meatloaf at the time) one night for dinner 28 years ago. After dinner is when he told me he hated meatloaf....until that night!!!!! This is the only meatloaf he will eat!!!

Ingredients For meatloaf

    lb. extra lean ground beef
  • 1
    lb. sausage-i only use jimmy dean, have tried other brands but we didn't like them
  • 1/2
    medium green bell pepper, seeds removed, chopped
  • 1
    medium onion, chopped-i only use vidalia
  • 1
    stalk of celery, chopped
  • 1
    cup plain bread crumbs
  • 1
    extra large (or large) egg
  • 1/8
    cup worcestershire sauce-i only use french's, have tried the other major brand, but it wasn't liked
  • bacon slices

How To Make meatloaf

    pre-heat oven to 350
  • 2
    in a large mixing bowl add all ingredients except bacon, mix with hands very well (i now have a stand up mixer and use it instead;fast!) before i had the stand up mixer, i used powder free surgical gloves to mix the ingredients, i do still use them to get the mixture out of the bowl and into the loaf pan though

    put mixture in loaf pan; i use the perfect meatloaf pan, nice draining of the fat from the sausage;before buying perfect meatloaf pan i used roasting pan with bottom lined with foil for easier clean up

    add bacon slices on top

    cook uncovered for 1 hour
