One of my favorite Kielbasa or Smoked Sausage dinners, is with sauerkraut. But, that is a fall & winter meal, to us. So, this is a meal, I found in Better Homes and Gardens - Summertime Cooking for spring and summer, that suits us a lot better for warm weather. And, it uses the ever popular zucchini. I tweaked this recipe to allow a choice of sausages. I try to use a low-fat turkey sausage.

Ingredients For linguine with zucchini and kielbasa

  • 6 oz
    linguine
  • 1/4 c
    red wine vinegar
  • 1 Tbsp
    sugar
  • 1 Tbsp
    dijon-style mustard
  • 1 tsp
    dried basil, crushed
  • 2 Tbsp
    water
  • vegetable cooking spray
  • 12 oz
    low-fat turkey, beef or pork kielbasa or smoked sausage, halved lengthwise and cut into 1/4 inch-thick slices
  • 1 md
    sweet red or green bell pepper, cut into bite-size strips
  • 1 md
    onion, chopped
  • 2 sm
    zucchini, thinly sliced

How To Make linguine with zucchini and kielbasa

    Cook linguine, in boiling salted water, per package directions. Drain. Set aside.

    For dressing: in a small mixing bowl, combine vinegar, sugar, mustard, basil and 2 Tbs. water. Set aside.

    Spray, a medium skillet with cooking spray. Cook, sausage, pepper, and onion, until sausage is heated through and onion is tender. Add dressing and zucchini, and cook 2 minutes more. Toss with linguine. Makes 4 servings. Variation: Saucy Kielbasa-Prepare as above, except omit dressing, and use 1 cup spaghetti sauce.
