left over easter ham salad

This is a very basic salad. I found this recipe in the Philadelphia Inquire News paper over 29 yrs ago. I was learning,heck I am still Learning so I will say I was Beginning to run my own home serve every day meals as well as holiday meals. I cooked such a big ham that first year for just 2 of us I was ever so grateful to the Inquire for running a week of left over ham ideas and recipes. Over the years a few ingredients have changed to suit our taste but basically this recipe has stayed the same and is a favorite in my house hold. Occasionally we get a ham just to have left overs.

Ingredients For left over easter ham salad

  • FOR THE VINAIGRETTE:
  • 2 Tbsp
    red wine vinegar
  • 1 tsp
    dijon mustard
  • 1 tsp
    sugar
  • salt and pepper to taste
  • 6 Tbsp
    olive oil
  • THE SALAD
  • 2
    ripe avacados peeled,halved and pitted
  • 2 Tbsp
    lemon juice
  • 2 lb
    baked ham cut into coarse slices
  • 2 md
    tomatoes thinly sliced
  • 1 md
    cucumber scored and thinly sliced
  • 1 md
    red onion thinly sliced in rounds
  • 6 c
    lettuce,mix and match it all works.

How To Make left over easter ham salad

    Make the Vinaigrette in a small bowl whisk together the vinegar,mustard,and seasoning. While constantly whisking slowly add in the oil,continue whisking until thickened.Set a side.

    Cut Avocado into large slices, cutting length wise making wedge shapes. Toss with the lemon juice and set a side.( when I am rushed or lazy I put the salad together and sprinkle the juice on top of the salad before tossing. I am normally serving the salad right away so it works)

    place the ham,tomatoes,cucumbers,onion and avocados in a bowl drizzle with half the dressing

    Toss lettuce with remaining vinaigrette,divide evenly onto the plates,place even amounts of the ham mixture on top of the greens and serve.

    We enjoy this dish with a crispy garlic bread and a bowl of piping hot soup.

    As you will notice from my pictures I put my salad together in one bowl jumping over a few steps and serving family style. It comes out just as tasty either way. I follow each step if I am serving to guest at a dinner party it makes it feel more formal.
