I have made this recipes for years , it can be served as a main dish or a side.It's even better the second day when all the flavors have set in.

Ingredients For karla's zucchini pie

  • 1/4 c
    onions ; chopped
  • 1/2 lb
    country sausage
  • 4 c
    chopped or shredded zuccihi
  • 1/2 c
    saltine cracker crumbs
  • 1/2 c
    parmesan cheese
  • 2
    eggs ; slightly beaten
  • salt and pepper to taste
  • 1/2 c
    mushrooms ; optional
  • 2 Tbsp
    parmesan cheese

How To Make karla's zucchini pie

  • 1
    Steam the zucchini just until tender ; DON'T over cook.
  • 2
    In a skillet brown sausage and onion and mushrooms.
  • 3
    Add the cheese , crumbs , eggs and salt and pepper. Fold in the zucchini.

    Pour into a buttered pie plate ; Sprinkle with 2 Tbs. parmesan cheese.

    Bake @ 350° for 45 minutes.

    Let stand 10 minutes to set before serving.
