This southern girl from Virginia loves her country ham and green beans. With addition of a creamy seafood sauce, I now have the perfect surf and turf dinner in a tater. I'm dedicating these taters to my brother Timmy & friend Joel. I was stumped on a name for this recipe. I took a lil' bit of the recipe name from both of their suggetions. Thank you guys so much!!! Ingredients For sw's loaded big country tater

  • 4 lg
    idaho baked potatoes
  • 1/4 lb
    green beans, fresh
  • 4 oz
    country ham, chopped
  • 4 Tbsp
    sour cream
  • 4 Tbsp
    creamy horseradish sauce
  • 1/2 stick
    butter, unsalted **more or less**
  • 1 Tbsp
    chives, chopped
  • 1 tsp
    everglades seasoning **fav seasoning salt** or to taste
  • 1/2 tsp
    black pepper

How To Make sw's loaded big country tater

    scoop potato flesh out of peel. keep warm
  • 2
    fry country ham pieces an a frying pan for 3-4 minutes

    preheat deep fryer to 350 degrees. fry green beans for 3 minutes or until green beans are crispy...not too brown. slice green beans on a bias
  • 4
    mash potatoes in a mixing bowl. add butter, everglades and pepper. mix well. fold in chives, seafood sauce, sour cream, 1/2 green beans & 1/2 ham. heat potato mixture in microwave for 2-3 minutes

    add potato mixture back into the warm potato skins. top with remaining green beans and ham. serve and enjoy!
