2/3 csake

1/4 cmirin

1/2 cdark brown sugar

How To Make japanese slow cooked pork belly

1Cut the pork belly into pieces. Place the pork belly in a crock pot. Mix the ginger, dashi, sake, mirin, brown sugar, and soy sauce and pour over the pork belly

2Add 1 cup of water and cook 5 hours on low until pork is tender.

3Remove the pork from the cooker and set aside. Strain the broth discarding the solids and put through a fat separater. Place in a saucepan and reduce by half

4Serve the sauce over the pork belly garnished with the scallions.
