jamie's grilled chutney stuffed porkloin

In the mood to grill and thought how good a porkloin would be with a good fruit chutney stuffed inside and slow cooked over a bed of charcoal. My favorite way to cook...So this is the recipe I came up with and my husband and I say it is good. I grilled till reached 160°F inside over indirect coals. Served atop sliced Gouda cheese.

1pork loin, used 2 about 3 lbs each sliced open

1 cpanko bread crumbs

1 jarcolonial chutney, 9 oz.

10 lbkingsford charcoal

lighter fluid and matches

butchers twine

How To Make jamie's grilled chutney stuffed porkloin

1In a mixing bowl mix the chutney and panko crumbs togather.

2place the porkloin on a cutting board slice it open but not all the way through. lay flat and place plastic wrap over it and get a rolling pin began to pound down on the pork to flatten open.

3place a heaping spoon full of dressing in the center of the pork and make sure it is all the way down the pork. spread over the meat. Then roll the loin up jelly roll style. When rolled tie off the ends and center with the butchers twine. Place in a disposable pan cover with reynolds wrap place on the grill and make sure the coals are banked so that the pan is in center of grill so the heat will cook the pork evenly about 45 min or til meat registers 160°F . Remove slice and serve immediately. Drizzle some of the pan glaze over the meat it desired. It is sweet and good.

4I sliced Gouda Cheese and placed in plate then porkloin on top of cheese drizzled pan glaze over and serve hot off the grill.
