My husband is from Louisana and found this recipe that a Texas girl could fix. We usually have this with homemade corn bread and a salad.

Ingredients For jambalaya

1 pkgeckrich polaska kielbasa sausage can substitue 3 cups cooked chicken

1 mdchopped onion

1 mdchopped bell pepper
-
1 cloveminced garlic or 1/2 tsp garlic salt

2 ccooked long grain rice
-
1 canrot-tel tomatoes
-
tobasco to taste

2 Tbspolive oil
How To Make jambalaya

1Slice Sausage thinly with a sharp knife

2Coat a large pan with olive oil. Saute onion, bell pepper and garlic in oil until tender.

3Add sliced sausage and cook (stir often) 10 minutes low heat. Add tomatoes and cover cooking 10 - 15 minutes stirring occasionaly. Drain off grease as necessary.

4In the meantime cook the rice with butter, salt and pepper.

5Add rice and stir to blend and cook a few minutes more.
