Ingredients For italian meatloaf

2 lgeggs

3/4 csoft bread crumbs

1/2 ctomato juice

1/2 tsporengano

1/4 tspsalt

1/4 tsppepper

1 smclove..minced

3 Tbspsnipped parsley

2 lbvery lean ground beef
-
8thin slices boiled deli ham
-
1 1/2 cshredded mozzerella cheese
-
3squares sliced mozzerella cheese..halved diagonally
How To Make italian meatloaf

1Combine 1st 8 ingredients.Stir into ground beef;mixing well. On foil,pat meat to a 10"x12" rectangle. Arrange ham slices on top of meat,leaving a margin along edge. Sprinkle shredded cheese over ham.

2Start from the short end carefully,roll up meat,using foil to lift. Seal edges And ends well.Place seam side down in a 9"x13" baking pan.

3Bake 1 hour then place the cheese wedges over top of roll..Return to oven 10 minutes or until cheese melts.
