Wow, I am so excited!!! I finally conquered the "pork tenderloin" tonight for dinner. I have tried making this several time with no success. It would always come out very tough because I would over cook it. This came out so tender, moist and delicious with the seasoned crust on the outside it was spicy too! My husband & I both loved this delicious recipe from P90X nutritional cookbook.

Ingredients For island pork tenderloin

  • 16 oz
    pork tenderloin, lean
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 1/2 tsp
    chile powder
  • 1/2 tsp
    ground cumin
  • 1/2 tsp
    cinnamon
  • 2 tsp
    olive oil
  • 1/4 c
    brown sugar, firmly packed
  • 1/2 Tbsp
    fresh garlic, finely chopped
  • 1/2 Tbsp
    tabasco sauce

How To Make island pork tenderloin

    Preheat oven to 350 degrees. Stir together salt, pepper, cumin, chile powder, and cinnamon, then coat pork with the spice rub.

    Heat 1 TBSP oil in a 12-inch skillet over moderately high heat and brown pork turning onto all sides about 4 minutes on each.

    Stir together brown sugar, garlic, and Tabasco and pat onto top of tenderloin.

    Place pork in a roasting pan and cook in the oven for 20 minutes. Afterwards remove from oven and let sit for 10 or 15 mintes.

    September 16th, 2015 --- Made this for dinner tonight and added a delicious homemade Sweet & Spicy Chili Sauce that I traded for at a Food Swap. It put this tenderloin over the top in delicious flavors!
