Wow, I am so excited!!! I finally conquered the "pork tenderloin" tonight for dinner. I have tried making this several time with no success. It would always come out very tough because I would over cook it. This came out so tender, moist and delicious with the seasoned crust on the outside it was spicy too! My husband & I both loved this delicious recipe from P90X nutritional cookbook.

Ingredients For island pork tenderloin

16 ozpork tenderloin, lean

1/2 tspsalt
-
1/4 tsppepper

1/2 tspchile powder
-
1/2 tspground cumin
-
1/2 tspcinnamon
-
2 tspolive oil
-
1/4 cbrown sugar, firmly packed

1/2 Tbspfresh garlic, finely chopped

1/2 Tbsptabasco sauce
How To Make island pork tenderloin

1Preheat oven to 350 degrees. Stir together salt, pepper, cumin, chile powder, and cinnamon, then coat pork with the spice rub.

2Heat 1 TBSP oil in a 12-inch skillet over moderately high heat and brown pork turning onto all sides about 4 minutes on each.

3Stir together brown sugar, garlic, and Tabasco and pat onto top of tenderloin.

4Place pork in a roasting pan and cook in the oven for 20 minutes. Afterwards remove from oven and let sit for 10 or 15 mintes.

5September 16th, 2015 --- Made this for dinner tonight and added a delicious homemade Sweet & Spicy Chili Sauce that I traded for at a Food Swap. It put this tenderloin over the top in delicious flavors!
