makes 5#.,this is my go to recipe for Italian, has a touch of heat but the flavors blend so well,don't omit the red wine,thats what makes it authentic. Burgundy or a Merlo works for me! enjoy Italy at Home!

Ingredients For hot italian sausage

  • 5 lb
    pork shoulder butt
  • 1 c
    red wine
  • 1 c
    chopped fresh parsley
  • 5 tsp
    salt
  • 1 Tbsp
    garlic powder or 4-5 garlic cloves,minced
  • 1 Tbsp
    fresh ground black pepper
  • 3 tsp
    cayenne pepper
  • 5 Tbsp
    fennel seeds
  • 2 tsp
    crushed chili pepper flakes
  • 5 Tbsp
    paprika,i use hot hungarian

    hand trim fat from outside meat to your specs. Grind the meat- semi coarsely

    After grinding, add all the seasonings & wine. I like to pour the wine into the spices, mix well & pour all over the meat, mix very well untill all meat has developed that orange color! May want to use hands, pull of wedding ring(s). make sure hands clean! please, I stress keep cool!

    Either stuff into hog casings 33-35mm.. or freeze in 1/2# chubs. I form mine into small squares,wrap w/plastic wrap, then vacuum pack, most do not have this oppertunity so butcher paper is next alt. Enjoy the awesome smell as you are working!
