This is an old German recipe. It uses leftover meat and, if possible, leftover diced red potatoes. I never have those, so usually have to start from scratch there. I guess I need to plan better.

Ingredients For hoppel poppel

  • 1 lg
    onion, chopped
  • 1/4 c
    + 1 Tbsp butter, melted
  • 3 1/2 c
    diced red potatoes, cooked and peeled
  • 1 c
    diced pork or roast beef, cooked
  • 4 md
    eggs, beaten
  • 1 Tbsp
    chopped fresh parsley
  • salt and pepper, to taste

How To Make hoppel poppel

  • 1
    Saute the onion in butter in a large skillet for 1 minute.
  • 2
    Add the cooked, diced potatoes and cook for 3 minutes.
  • 3
    Add the meat and cook for 2 minutes.
  • 4
    Combine the eggs, parsley, salt, and pepper beating with a wire whisk until blended.

    Pour the egg mixture over the potato mixture; cook over low heat until the eggs are set, stirring occasionally.
