This is an old German recipe. It uses leftover meat and, if possible, leftover diced red potatoes. I never have those, so usually have to start from scratch there. I guess I need to plan better.

Ingredients For hoppel poppel

1 lgonion, chopped

1/4 c+ 1 Tbsp butter, melted

3 1/2 cdiced red potatoes, cooked and peeled

1 cdiced pork or roast beef, cooked

4 mdeggs, beaten

1 Tbspchopped fresh parsley

salt and pepper, to taste
How To Make hoppel poppel

1Saute the onion in butter in a large skillet for 1 minute.

2Add the cooked, diced potatoes and cook for 3 minutes.

3Add the meat and cook for 2 minutes.

4Combine the eggs, parsley, salt, and pepper beating with a wire whisk until blended.

5Pour the egg mixture over the potato mixture; cook over low heat until the eggs are set, stirring occasionally.
