This is a great fall recipe! My daughter (who has a busy life style in NYC) introduced this recipe to me a couple years ago when she started a Paleo diet plan. It's quick and easy to put together in the crock pot or slow cooker, makes your kitchen smell wonderful, and is absolutely delicious! Once the pork is shredded, you may serve any way you wish - simply on a plate with some roasted veggies or potatoes for a side dish, or serve it up on buns for sandwiches.

Ingredients For honey ginger apple shredded pork

1/2 cbeef or chicken broth

1yellow onion, sliced

2-3 lbpork loin roast

2apples, cored and sliced

1 Tbspraw honey

2 Tbspfreshly grated ginger

1 tspcinnamon

1 tspsalt

1/2 tspsmoked paprika

1/2 tspground black pepper

2garlic cloves, peeled and smashed

How To Make honey ginger apple shredded pork

1Pull out your crockpot.

2Pour in broth, then onions.

3Place pork loin roast on top of onions,then add apples, honey, spices, garlic cloves, and bay leaf to the pot.

4Cover and cook on LOW for 8-10 hours or HIGH for 6-8 hours.

5Use tongs or fork to shred the pork, stirring to combine with other cooked ingredients.
