I always keep several packages of ground pork and ground chicken in my freezer. Then, if I need Italian or breakfast sausage, I can pull it together in less than ten minutes. This is my recipe that I use for meatballs, pizza, lasagna or just patties to serve along side our favorite Italian dinners. I adjust the heat depending on how it is going to be used.

  • 1 lb. ground pork or ground chicken
  • 1/2 tsp. oregano
  • 1/4 tsp. rosemary
  • 1 1/4 tsp. parsley
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. thyme
  • 1 tsp. garlic powder
  • 1 1/2 tsp. paprika
  • 1/2 tsp. fennel seeds
  • FOR HOT ITALIAN SAUSAGE, ADD 1/8 - 1/4 TSP. CRUSHED RED PEPPER FLAKES, BROKEN UP BETWEEN YOUR FINGERS

How To Make homemade italian sausage in 10 minutes

    Place all spices in a large, zip lock bag and mix. Add ground meat, seal and mix until uniform, but no more. Over mixing can make it tough.

    Shape into four to six patties (one patty per serving) or, if using for pizza, etc., leave as is. If you can, let the sausage hang out in the fridge for a few hours to allow the meat and spices get to know each other. =) Then, use as you wish. When I serve as patties or meatballs with an Italian dinner, I brown until almost done and then add to the sauce to keep warm.
