This is great for a light lunch or supper especially when it is cold. Toss a few leaves of spinach on it along with pasta and grated cheese. YUMMY! It is even better when shared. Don't forget the ginger mint tea as beverage!

Ingredients For hearty italian sausage soup

  • 1 lb
    italian pork sausage
  • 1 md
    onion
  • 1 clove
    garlic
  • 1 can
    great northern beans
  • 1 can
    garbanzos, cooked
  • 1 can
    beans
  • 1 md
    zucchini
  • 1 lg
    carrot
  • 1
    sweet yellow pepper
  • 1 sm
    jalapeno peppers
  • 8 c
    broth, low sodium

How To Make hearty italian sausage soup

    Brown Italian Sausage at medium heat.

    Diced medium onion.
  • 3
    Cube zucchini. Julienne carrots.Mince 1 garlic clove. slice 1 jalapeno pepper.

    Open two cans of diced tomatoes.

    Drain and rinse 4 can of beans: cannelloni, red kidney, northern, and garbanzo beans.

    Add the onions and garlic to saucepan. saute to translucent state. Stir in other vegetables and tomatoes. Stir in beans. Add low sodium Italian seasonings, about two teaspoon. Add 8 cups of chicken or turkey stock. Bring to a rolling boil. Lower heat and simmer for about an hour.
