Yum, dried seasonal fruit and pork go to together so well! I usually serve w/ a light stuffing mix of day old bread and spices, w/ some fruit, like cranberries.

Ingredients For healthy harvest pork chops

    bone-in or pork loin, 1"-thick pork chops
  • 1 c
    apple chopped, it's up to you if you want the apple peeled, i don't peel them
  • 1 c
    dried, chopped apricots
  • 1/2 c
    frozen cranberries
  • 1
    onion, chopped
  • 2
    celery ribs, chopped
  • 1 c
    apple juice
  • 1/2 c
    light brown sugar
  • 1 tsp
    each, salt and pepper
  • 1-1/2 Tbsp
    cornstarch
  • 2 Tbsp
    cold water

How To Make healthy harvest pork chops

    Combine all ingredients, except cornstarch and water in lg bowl, add to slow cooker. Cover, cook on low about 7 hrs. 30 mins before serving, pour liquid from cooker into a bowl. Skim off any fat.

    Stir in cornstarch and water, mix and pour into cooker. Stir. Cook, stirring, until thickened. Spoon sauce over chops, making sure to get some of the fruit on each chop.
