Ingredients For grilled honey-glazed pork chops

  • 4 - 10 oz
    pork chops, rib or center-cut, about 1" thick
  • 1/4 c
    sugar
  • 1 tsp
    salt and pepper
  • 2 Tbsp
    apple cider vinegar
  • 1/2 tsp
    cornstarch
  • 1/4 c
    honey
  • 1 1/2 Tbsp
    dijon mustard
  • 1/2 tsp
    thyme, fresh
  • 1/8 tsp
    cayenne pepper

How To Make grilled honey-glazed pork chops

    Cut 2 slits about 2" apart through fat & connective tissue around outside of each chop. Combine sugar, salt & pepper in bowl. Pat chops dry with paper towels & rub with sugar mixture.

    Whisk vinegar & cornstarch in small saucepan until no lumps remain. Stir in honey, mustard, thyme & cayenne & bring to boil. Reduce heat to medium-low & simmer until glaze is reduced to 1/4 C, 5 - 7 minutes.

    FOR CHARCOAL GRILL: Open bottom vent completely. Light large chimney starter filled with charcoal briquettes (6 qts). When top coals are partially covered with ash, pour 2/3 evenly over grill, then pour remaining coals over 1/2 of grill. Set cooking grate in place, cover & open lid vent completely. heat grill until hot, about 5 minutes. FOR GAS GRILL: Turn all burners to high, cover & heat grill until hot, about 15 minutes. Leave primary burner on high & turn other burners to medium-low.

    Clean & oil cooking grate. Place chops on cool part of grill & cook (covered if using gas) until meat registers 140 degrees F, 3 - 5 minutes per side. Brush chops with glaze & grill, glazed side down, over hot part of grill until carmelized, about 1 minute. Repeat with second side of chops. Transfer chops to platter, tent loosely with aluminum foil & rest for 5 - 10 minutes. Brush with remaining glaze. Serve & enjoy!
