2 cdark beer

1/4 ccoarse salt

4-6center cut pork chops, about 1-inch (3 cm) thick

6-8cloves garlic, finely chopped

2 tspdried sage

salt and freshly ground pepper to taste
How To Make grilled beer-brined pork chops

1Combine the water, beer, and salt in a bowl and stir to dissolve the salt. Place the pork chops in a resealable plastic bag and add the brine mixture. Refrigerate for 4 hours, turning the bag occasionally.

2Remove the pork chops from the brine (discard the brine) and pat dry with paper towels. Mix the garlic, sage, salt, and pepper in a small bowl and rub the mixture on both sides of the pork chops.

3Cook over hot coals or in a skillet over moderate heat until they reach 145F (63C) on an instant read thermometer. Remove from the heat and let stand for 5 minutes before serving.
