I hope that you will enjoy this spicy green curry pork sausage dish that was inspired by my Thai spicy fried pork recipe. The surprise ingredient is the Hot Italian Sausage. It worked beautifully in this dish which I served over Jasmine Rice. I bet it would also be tasty over noodles.

Ingredients For green curry sauce with spicy pork sausage

1 Tbspsesame oil

2 Tbsppeanut oil
-
1/2 smred onion, finely sliced

2 mdshallots, finely minced

1inch ginger, fresh, finely minced

3 clovegarlic, finely minced
-
1 smfresh, sweet yellow bell pepper, sliced 1/2 inch pieces
-
5hot italian sausages, raw, casing removed
-
2 Tbspgreen curry
-
1 cgreen peas or green beans, fresh, chopped
-
3/4 cpineapple, fresh, medium, chunks (optional)
-
2 (400ml) canunsweetened coconut milk (reserve 200 ml for rice)

2 1/2 Tbsppalm sugar, coconut sugar or brown sugar

1 Tbspfish sauce
-
1 tspfresh, lime rind, finely minced
-
2fresh limes, juiced
-
1/4 cfresh cilantro, coarsely chopped

1 1/4 cwater, cold

200 mlcoconut milk, unsweetened

1/2 tspsea salt

1 cjasmine rice

1/4 ccilantro, mint or basil, finely sliced
How To Make green curry sauce with spicy pork sausage

1Rice Add water, coconut milk and salt to a small pot, cover pot with lid and place on high heat until it boils. Add rice, stirring well; once it starts to boil, cover with lid and reduce heat to lowest setting. Cook for 15 minutes, until all the water is absorbed, then remove from heat. Stir with a fork to fluff the rice and set aside covered until needed.

2Sauce To start place a large pot on medium high heat and add the peanut and sesame oils. Once the oil is heated add the red onion, shallots, ginger, garlic and sweet yellow peppers and fry for 3 minutes. Add the raw, sausage meat and cook for 7 minutes, stir often and drain if necessary.

3Next add the green curry paste and stir gently for 3 minutes, making sure to coat everything in the curry to allow its flavors to develop. Taste and season with salt if necessary.

4Now add the green peas or green beans and pineapple chunks, then slowly add the remaining coconut milk, water, brown sugar, fish sauce, lime rind, lime juice and cilantro to the pot, stirring until well blended.

5Increase the heat until the mixture boils, then lower to a simmer for 10 minutes, stirring occasionally.

6Taste and adjust seasoning with more fish sauce or sugar. Stir 2 minutes then serve over jasmine rice. Garnish with chopped cilantro and lime wedges.
