2 lbpork loin roast

2apples, granny smith, sliced into thin wedges

1onion, red, sliced into thin wedges

2 Tbspolive oil, extra virgin
- RUB

1/2 tspgarlic powder

1/8 tspcayenne pepper
-
1/2 tspdill seed
-
1/2 tsplemon pepper
-
1/4 tspdill, dried
- GLAZE
-
1 Tbspbalsamic vinegar

1 Tbsphoney
How To Make glazed pork roast stuffed with apples & onions

1Preheat oven to 350

2Mix together glaze ingredients. Set aside.

3Mix together rub ingredients and rub onto roast

4In a cast iron skillet, heat the olive oil & brown roast on all sides

5Slice pork roast lengthwise to within 1/4"-1/2" of edge for stuffing.

6Open the slit in the roast and stuff with as many apple & onion wedges as will fit. Tie roast closed with string.

7Arrange remaining apple & onion wedges around the roast in the roasting pan.

8Coat & drizzle roast with the glaze. Roast at 350 for 45-60 mins, or until done.
