    dry pinto beans
  • 1/2 lb
    mexican chorizo or chorizo espanol
  • 1/4 lb
    bacon
  • 1/2 lg
    chopped onion
  • 1 OR 2 md
    jalapeno peppers sedded
  • 1/4 bunch
    fresh cilantro
  • 1/4 lb
    ham strips
  • 1 c
    pork rinds

    THE NIGHT BEFORE RINSE AND SOAK THE PINTO BEANS WITH SOME CUMMIN SEEDS AND GARLIC.NEXT MORNING IN THAT WATER BOIL FOR ABOUT HALF HOUR THE BEANS. DRAIN THE BEANS AND ADD FRESH WATER AND COOK THEM UNTIL TENDER.. THE REASON I COOK THE BEANS IN THAT WAY, IS BECAUSE YOU DONT GET ANY GAS AT ALL

    FRY THE BACON AND WHEN STARTS GETING CRISP ADD THE CHORIZO, I LIKE MORE THE ESPANOL CHORIZO, THIS KIND OF CHORIZO U CAN ALWAYS LOOK IN THE ETHNIC STORES.WHEN BOTH ARE VERY CRISP, ADD THE HAM AND THE REST OF INGREDIENTS ( not the pork rind s)THEN ADD THE BEANS, AND LET THEM BOIL FOR ABOUT 20 MINUTES.
