I like brats grilled, so I guess you know how I do them. Have fun making them. I usually make around 500 lbs a year. Not just Brats... I make many sausages.

Ingredients For fresh homemade bratwurst sausage

3 lbpork butt

1 Tbspkosher salt

2 tspground white pepper

1 tspmarjoram, dried (heaping)

1/2 tspcaraway seeds

1/2 tspnutmeg

1/2 tspallspice
-
1 tspginger
-
1 Tbspminced garlic (optioal)

2 tspred pepper flakes (optional)

1 sm5 foot piece of natural hog casing
How To Make fresh homemade bratwurst sausage

1Mix all the spices together in a bowl.

2cut all the pork butt into pieces big enough for your grinder to handle. Spread the spices from the bowl on the pork chunks and mix well by hand.

3Grind meat chunks with medium plate. (IMPORTANT) take a little piece of sausage and fry it to see if spices are enough, if not add and mix again.

4My wife like brat patties. I like brat links. So i stuff half into hog casings, and the other half into bulk. I suck the air out of the packages, and freeze them.
