I'm a big fan of dishes I can serve up with "everything" in them! Less serving dishes on the table. LOL. This sounds more involved than it is. Like a stir fry, if you prep ahead of time you can do lots of the cooking while the pasta is cooking.

Ingredients For fettuccine with sausage and vegetables

8 ozpackage dry fettuccine

1 lbitalian sausage, cut into 1/2 inch pieces

3/4 cgreen onions, sliced

2 clovegarlic, minced

3 Tbspbutter, melted

2 Tbspvegetable oil
-
3 czucchini, sliced
-
2 cbroccoli florets
-
2 cfresh mushrooms, sliced

2 mdtomatoes, cut into wedges

1/2 cfresh parsley, chopped

1 Tbsplemon juice
-
1 tspdried whole basil (leaves, not ground)
-
1 tspdried whole oregano (leaves not ground)

1/4 tspground black pepper
-
1 dashground red pepper
-
3/4 cmozzarella cheese, shredded

1/2 cromano cheese, grated
How To Make fettuccine with sausage and vegetables

1Cook the fettuccine according to package directions; drain well. Set the fettuccine aside.

2Cook the sausage in a large skillet over medium heat until browned on all sides; drain well, discarding the drippings. Set the sausage aside.

3Saute the green onions and garlic in butter and oil in a large skillet over medium heat for 3 minutes. Add the zucchini, broccoli, and mushrooms, and saute 3 to 5 minutes. Add the reserved sausage, tomato, and the next 6 ingredients; cook 3 minutes.

4Combine the cooked fettuccine and vegetable mixture; toss gently. Sprinkle with mozzarella and Romano cheese; toss well. Serve immediately.
