Who said that you can't fancy up spam? Well I think that I made a pretty good attempt at it. This is quick, easy and scrumptious. So lets stop talking bad about spam behind her back and say "Spam I Am" Enjoy! Happing Cooking! sw:)

Ingredients For lobster salad sammie with hot spam dressing

  • 1 can
    spam® classic
  • 1 1/2 pt
    lobster meat, cooked and sliced
  • 1/2 c
    fennel root , chopped
  • 1 md
    shallots, sliced
  • 3/4 c
    olive oil, extra virgin
  • 1/4 c
    red wine vinegar
  • 1 Tbsp
    all purpose greek seasoning
  • 1 tsp
    crushed red pepper flakes or to taste
  • 1 tsp
    thyme leaves
  • 1 Tbsp
    splenda
  • 1 stick
    butter, unsalted
  • 4 slice
    12 grain bread, cut crust
  • 2 c
    spring salad mix

How To Make lobster salad sammie with hot spam dressing

    Get everything ready...In a mixing bowl, add oil, vinegar, greek seasoning, red pepper flakes, thyme, and splendar
  • 2
    In a large frying pan on medium heat, add half of the butter and fry diced spam until crispy. Remove and set aside.

    Toast the slices of bread in that same pan until golden brown flipping once. Remove and set aside

    To that same frying pan; add remaining butter, shallots and fennel. Saute veggies until soft and translucent.

    Add the dressing to pan with veggies. Simmer for a minute or two.

    On 4 serving plates, place one piece of toast followed by spring salad mix, lobster, fennel and shallot dressing top with crispy SPAM
