This is a dish that I will be serving up at my holiday open houses, and it is not just for the holidays… This stuff rocks any time of the year. The spices are designed to complement the ham and work in anything from a sandwich to a salad. So, you ready… Let’s get into the kitchen.

1 1/2 lbham, roughly chopped

4 - 5 mdgreen olives, pitted
- THE BINDING INGREDIENTS

1/3 cplain mayonnaise, i prefer duke’s

2 ozparmesan cheese, finely grated

2 ozcrushed pineapple, drained, blotted with paper towel

1 - 2 Tbspsweet pickle relish, drained, blotted with paper towel

1 Tbspbrown mustard, i prefer grey poupon

2 tsphot sauce, i prefer frank’s

1 tspworcestershire sauce, more on this later

1 tspwhite vinegar

1/2 tspcelery salt

1/4 tspwhite pepper, freshly ground

1PREP/PREPARE

2To make this recipe, you will need a food processor fitted with an S-blade, or a good blender.

4Gather your ingredients (mise en place).

5Roughly chop the ham.

6Toss the ham and a few olives into a food processor, or blender.

7Use 1-second pulses until finely chopped.

8Add all the binding ingredients in a bowl.

9Mix until thoroughly combined.

10Add to ham and mix to combine.

11If you have the time, cover, and let sit in the refrigerator for a few hours, or overnight. This will help the flavors blend together.
