This is a dish that I will be serving up at my holiday open houses, and it is not just for the holidays… This stuff rocks any time of the year. The spices are designed to complement the ham and work in anything from a sandwich to a salad. So, you ready… Let’s get into the kitchen.

Ingredients For everyday essentials: andy’s devilish ham spread

  • PLAN/PURCHASE
  • FOR THE FOOD PROCESSOR
  • 1 1/2 lb
    ham, roughly chopped
  • 4 - 5 md
    green olives, pitted
  • THE BINDING INGREDIENTS
  • 1/3 c
    plain mayonnaise, i prefer duke’s
  • 2 oz
    parmesan cheese, finely grated
  • 2 oz
    crushed pineapple, drained, blotted with paper towel
  • 1 - 2 Tbsp
    sweet pickle relish, drained, blotted with paper towel
  • 1 Tbsp
    brown mustard, i prefer grey poupon
  • 2 tsp
    hot sauce, i prefer frank’s
  • 1 tsp
    worcestershire sauce, more on this later
  • 1 tsp
    white vinegar
  • 1/2 tsp
    celery salt
  • 1/4 tsp
    white pepper, freshly ground

    To make this recipe, you will need a food processor fitted with an S-blade, or a good blender.

    Gather your ingredients (mise en place).

    Roughly chop the ham.

    Toss the ham and a few olives into a food processor, or blender.

    Use 1-second pulses until finely chopped.

    Add all the binding ingredients in a bowl.

    Mix until thoroughly combined.

    Add to ham and mix to combine.

    If you have the time, cover, and let sit in the refrigerator for a few hours, or overnight. This will help the flavors blend together.
