1 lgbaking potato, peeled and cut into 1/2 inch cubes

1garlic clove, minced

2 canbeef broth, 14 1/2 ounces

1 cangarbanzo beans, canned, drained

1 jarchunky tomato pasta sauce

1 1/2 cwater

1/2 tspdried italian seasoning, crushed

1bay leaf

1 czucchini, sliced very thin

parmesan cheese, grated

1In large skillet, crumble and brown sausage; drain.

2In 3 1/2 to 4-quart slow cooker, combine cooked sausage and all remaining ingredients except zucchini and cheese; stir gently to mix.

3Cover; cook on low setting for 7 to 9 hours.

4Remove bay leaf.

5Gently stir in zucchini.

6Cover; cook an additional 30 minutes or until zucchini is tender.

7To serve, ladle soup into bowls; sprinkle with cheese.
