I made this sandwich as a dedication to my favorite song by the late Michael Jackson, "Earth Song". I believe that we need to take a long hard look at how we are destroying the beauty of nature. Let us all make a conscious effect to preserve what we have for future generations. BTW, it's one heck of a sammie! Cooking with Passion, sw :)

Ingredients For earth song sammie

  • 1 lg
    head of cauliflower, sliced in 4 equal parts
  • 4 Tbsp
    extra virgin olive oil, divided
  • 1 lg
    leek, sliced and cleaned
  • 2 md
    garlic cloves, minced
  • 1 tsp
    all purpose greek seasoning, divided
  • 4 oz
    goat cheese
  • 4 oz
    asiago cheese, grated
  • 4
    smoked sausage links
  • 4 slice
    ready made bacon
  • 2 Tbsp
    italian parsley, chopped
  • 1/2 pkg
    2 pieces of lavash bread. cut in 1/2 width wise

    In a medium size heated skillet, add 1 Tbsp olive oil, leeks, garlic and 1/2 tsp greek seasoning to skillet. Sauté leeks and garlic for 3-5 minutes or until soft. Remove from skillet and cool.

    Combine cheeses, leeks and garlic in a small mixing bowl. Mix well. **Reserve 4 Tbsp cheese spread to spread on bread**

    Meanwhile, preheat oven to 400 degrees. Brush all sides of the cauliflower slices with remaining olive oil. Sprinkle remaining greek seasoning on cauliflower. Cut "3" inch slits in sausage length wise. Cut the tips of sausage off. Place cauliflower and sausage on a large cookie sheet. Bake for 15 minutes flip and bake for an additional 10 minutes until cauliflower is golden brown and fork tender. Remove from oven. **you may need to remove sausage before cauliflower is finish*

    Remove sausage from cookie sheet. Adjust oven temperature to broil "high". Add remaining cheese mixture on top of cauliflower. Top with bacon and parsley. Broil on middle rack in oven until cheese has melted.

    Spread remaining cheese mixture cheese on one half of bread slices. Place bread on a cookie sheet and warm in oven for 1 minute. Place cauliflower and sausage link on top of bread. Enjoy.
