Ingredients For cuban inspired smoked pork belly

  • 2 lb
    pork belly, slab
  • 8 oz
    mojo marinade (homemade or store bought)
  • 4 lg
    garlic cloves, smashed
  • 1/2 sm
    onion, grated
  • 3 Tbsp
    fresh cilantro, chopped
  • 1 tsp
    thyme, dried
  • 1 tsp
    oregano, dried
  • 2 tsp
    cumin, ground
  • 3 Tbsp
    fresh lime juice
  • 1/4 c
    evoo
  • 1 tsp
    crushed red pepper
  • 2 Tbsp
    brown sugar, light
  • kosher to taste

How To Make cuban inspired smoked pork belly

    Combine ingredients 2-14.

    Add marinade to pork belly. Olace in zip lock bag. Marinate over night.

    Smoke at 250 degrees for 6 hours. Baste with marinade and add additional wood chips as needed.
