takes some time but makes a great holiday main dish i use this both for christmas and at easter time...

Ingredients For cranberry/strawberry stuffed pork tenderloin

  • 1-2 lb
    pork tenderloin.. have store cut lengthwise in 1/2 but not all the way threw
  • 1 can
    jellied cranberry sauce[ can use whole berry sauce too]
  • 1 lb
    fresh or frozen strawberries
  • 2
    green onions... chopped... both white an green
  • 1/2 c
    dried cranberries
  • 1 Tbsp
    minced garlic
  • 1 tsp
    dried celery leaves
  • 2 dash
    strawberry vinegar
  • olive oil, light... as needed
  • 1 tsp
    garlic powder
  • 1 tsp
    onion powder
  • 1 Tbsp
    dried chives

How To Make cranberry/strawberry stuffed pork tenderloin

    lay meat on lg flat surface...cover with wax paper.. using meat malet pound meat into rectangle... have meat bout 1/4 in thick.. set aside

    in med saucepan put strawberries,cranberry sauce,dried cranberries green onions,garlic,celery leaves and vinegar[make your own strawberry vinegar...2 cups white vinegar and 2 cups sliced strawberry... put in fridge.. can use after a week leave strawberries in vinegar... strain vinegar as u need it...use the rest of the vinegar on a fresh spinach salad]cook and heat til onion is soft... set aside to cool

    mix olive oil,garlic powder,onion powder, and chives together[ start with bout 1/2 c oil[ depends on how big tenderloin is set aside

    take all of cranberry mix an spread over meat.. start at short end an roll up jelly roll style... take olive oil mix an rub over meat... put meat in 9x11 glass pan

    bake in 425 oven for 15 min.... turn oven down to 350... cook 45-60 minutes longer.....cover with foil if getting to browned

    let set 10-15 minutes ... then slice an enjoy
