Ingredients For cranberry pork roast/ slow cooker

  • 4 md
    potatoes, peeled and cut into 1 inch chunks
  • 3 lb
    boneless center-cut pork loin roast, rolled and tied
  • 1 can
    16 ounce can whole berry cranberry sauce
  • 1 can
    5.5 ounce can apricot nectar
  • 1 sm
    onion, chopped
  • 1/2 c
    coarsely chopped dried apricots
  • 1/2 c
    granulated sugar
  • 1 tsp
    dry mustard
  • 1/4 tsp
    crushed red pepper

How To Make cranberry pork roast/ slow cooker

    Place potatoes in 3 1/2 quart (or larger) slow cooker and place roast over potatoes.

    In a large bowl, combine remaining ingredients; mix well and pour over roast.

    Cover and cook on high setting for 5 to 6 hours. Remove roast to a cutting board and thinly slice. Serve with potatoes and sauce.
