Ingredients For country ham and corn casserole

    cooked ham, cubed
  • 1/2 c
    green onions, chopped
  • 1/2 c
    margarine or butter, melted
  • 3
    eggs, beaten
  • 15 oz
    can cream style corn
  • 11 oz
    can mexicorn (whole kernel corn, red & green peppers) drained
  • 1 pkg
    corn muffin mix (7 to 8-1/2 oz box)
  • 4 oz
    cheddar cheese, shredded (1 cup)

How To Make country ham and corn casserole

    Grease 12 x 8 (2 quart) baking dish.

    In large bowl, combine all ingredients except cheese. Pour into baking dish.

    Bake at 350 for 45 to 55 minutes or until golden brown and set. Sprinkle with cheddar cheese. Bake an additional 2 minutes to melt cheese. Let stand 5 minutes before serving.
