Made this up for Sunday brunch; along with some yummy homemade BBQ sauce and coleslaw. You can slow cook this dish (about 6 hours), or you can fire up your pressure cooker/instant pot and have it ready in about 90 minutes. Up to you. Serve it with tacos, roll up into a taquito, open faced on a flour tortilla, or on a soft bun topped with coleslaw. Have fun with it. So, you ready… Let’s get into the kitchen.

Ingredients For cooking under pressure: awesome bbq pork

  • PLAN/PURCHASE
  • 2 - 3 lb
    pork shoulder, bone in or out
  • 12 oz
    beer, something light
  • 2 Tbsp
    apple cider vinegar
  • 2 Tbsp
    coconut sugar
  • 1 tsp
    salt, kosher variety, fine grind
  • 1 tsp
    white or black pepper, freshly ground
  • 1 tsp
    dehydrated onions, ground to a powder
  • 1 tsp
    ground cumin
  • 1/2 tsp
    ancho chili powder
  • 1/2 tsp
    garlic powder
  • 1/2 tsp
    paprika, smoked variety
  • 1 1/2 c
    bbq sauce, homemade, or your favorite store bought

    You will need a pressure cooker, or instant pot, to make this recipe.

    I am using a pork shoulder for this recipe; however, you can experiment with other cuts of pork. I have used boneless pork chops, and pork tenderloin with equal success.

    Unless you are feeding a bunch of folks, you will probably have leftovers. Understand that this recipe freezes very well. Use Ziploc bags, or a vacuum sealer, pop into the freezer, and it will last up to a year.

    Gather your ingredients (mise en place).

    Add the pork to the pressure cooker/instant pot.

    You could sear the pork in a bit of oil… I choose to skip that step.

    Add the remaining ingredients, except the BBQ sauce, into a bowl, or measuring cup, and whisk to combine.

    Pour over the pork.

    Set the pressure cooker/instant pot to high, and cook for 1 hour, then let sit, without opening, for 20 minutes (natural release).

    Remove pork, shred, then place back into the pot, pour in the BBQ sauce, and mix to combine.

    There will be a lot of liquid in the the pressure cooker/instant pot. I usually drain all that out into a bowl before adding the shredded pork. Then, I add the BBQ sauce, and add a few tablespoons of the liquid to thin it out a bit. But that depends entirely on the type of BBQ sauce you are using, and if you want it to be thick or thin.
