There are a million ways to make meatloaf. Our family settled on this recipe many moons ago and it's always perfect. I'm not sure where the recipe came from but I remember mom making it when I was ten. It makes great sandwiches the next day...if there's any left:) Enjoy! 2/3/2013

Ingredients For amazingly good meatloaf-connie's

1 1/2 lbground chuck

1/2 lbground pork
-
1/2 cquaker oats or saltine crackers

2celery stalks
-
1/2 tspblack pepper
-
2eggs
-
1/2onion
-
1/8 cwater
-
1/2 ccatsup or bbq sauce
-
1 3/4 tspsalt note: use 11/4 teaspoon salt if using salted crackers

2 1/2 slicebread - optional
-
1/2 cshredded chedder cheese -optional
How To Make amazingly good meatloaf-connie's

1Mix eggs, onion, water, celery, salt and pepper in blender. Blend until celery and onion are chopped fine.

2Place ground pork and chuck into a large bowl. Mix together lightly. Too much mixing will toughen the meatloaf.

3Pour oats or crackers, shredded cheese and blender mix into bowl with ground pork and beef.

4Place whole bread slices in loaf pan. Mix meat thoroughly and pack firmly in loaf pan.

5Brush top with catsup or BBQ sauce. Our family likes the catsup.

6Bake at 350 degrees for 50 minutes.

7When done, remove from oven and let stand five minutes before serving.
