cold weather essentials: sassy pork & rice
Watched the Super Bowl yesterday and was so distraught at KC's performance that I could not go to bed. So, I pulled an all-nighter in the kitchen. Towards morning, I had developed this recipe. Tender pork with an awesome flavor, worthy of a second helping. So, you ready… Let’s get into the kitchen.

Ingredients For cold weather essentials: sassy pork & rice
- PLAN/PURCHASE

1 1/2 lbpork tenderloin
- THE MARINADE

1 Tbspsriracha, or hot chili sauce

1 Tbsptamari sauce, or liquid aminos

1 tsprice wine vinegar, unflavored
-
1/4 tspwhite pepper, freshly ground
-
1/4 tspsalt, kosher variety, fine grind
- THE SAUCE

3 Tbspsriracha, or hot chili sauce

2 Tbsptamari sauce, or liquid aminos

1 Tbspketchup
-
1 Tbspcoconut sugar
-
1/2 tsptoasted sesame oil
-
1/2 tspginger powder
- ADDITIONAL ITEMS

2 clovegarlic, minced

toasted sesame oil, for cooking

grapeseed oil, or other non-flavored oil, for cooking

steamed white or brown rice
How To Make cold weather essentials: sassy pork & rice

1PREP/PREPARE

2You will need a skillet big enough to hold all of the ingredients to make this recipe.

4Gather your ingredients (mise en place).

5Cut the tenderloin into bite size cubes or strips.

6THE MARINADE

7Whisk all the marinade ingredients together.

8Take a Ziploc bag or non-reactive container that can be covered, and add the pork with the marinade, then mix to thoroughly coat the pork.

9Place in fridge for 4 – 6 hours.

10THE SAUCE

11About an hour or so before removing the pork from the fridge, mix the sauce ingredients together, and reserve.

12THE COOKING

13Cook the rice according to package directions.

14While the rice is cooking, remove the pork from the fridge.

15Add about two tablespoons of grapeseed oil and 1 tablespoon of toasted sesame oil to a skillet over medium heat.

16Add the 2 cloves of minced garlic to the pan, and sauté until fragrant, about 60 seconds.

17Shake off the excess marinade from the pork and add to the pan.

18You do not want to crowd the pan, so you may have to do this in batches. Once one batch is finished, reserve in a bowl, and do another batch until all the pork has been browned. You want the pork to brown and begin to crisp.

19Return all the pork to the skillet and add the reserved sauce.

20Simmer, until the sauce thickens, about 4 – 6 minutes.

22Serve over steamed rice with a side salad and crusty bread. Enjoy.
