My Mom's favorite place to eat is Cornacopia Restaurant in Cashiers,NC. Now she can't get out, so I did some searching a while back & came up with a recipe that is pretty simular to thiers. Why pay $15 for a 1/2 slab with fries & cole slaw when I can make a full slab for the same price?

Ingredients For coca-cola bbq ribs

  • 2 slabs
    baby back pork ribs (i use smithfield pork loin backribs)
  • SPICE RUB:
  • 4 Tbsp
    brown sugar, firmly packed
  • 2 Tbsp
    salt and pepper (each)2
  • 2 Tbsp
    onion powder
  • 1 Tbsp
    paprika (optional - i don't use it)
  • COCA-COLA BBQ SAUCE:
  • 1 can
    coca-cola (don't use diet - you're eating pork - just go for it!)
  • 4 c
    ketchup
  • 1/2 c
    worcestershire sauce
  • 2 tsp
    liquid smoke flavoring
  • 1/2 c
    a1 steak sauce
  • 1/2 c
    brown sugar, firmly packed
  • 1 tsp
    onion powder
  • 1 tsp
    garlic powder
  • 1 tsp
    black pepper

How To Make coca-cola bbq ribs

    THE DAY BEFORE: Remove membrane from back of ribs. Prepare spice rub. Rub the rub all over front & back of ribs. Double wrap in aluminum foil & refrigerate overnight.

    NEXT DAY: Gas grill (we have 4 burners) directions...preheat grill on high for 10 - 15 minutes. Remove ribs from foil. Once grill is heated, turn off 2 middle burneres & turn 2 outer burners to low (aka: indirect heat). Place ribs (bone side down) & grill for 1 1/2 hours (no turning the ribs - stays juicer that way).

    As the ribs are cooking, prepare the Coca-Cola BBQ Sauce (you can do this the day before as well so that the flavors marry together).

    COCA-COLA BBQ SAUCE: Combine the ingredients in a heavy saucepan & gradually bring to boil over medium heat. Reduce the heat slightly to obtain a gentle simmer. Simmer the sauce until reduced by 1/4 C, 6 - 8 minutes. Let cool to room temperature, then refrigerate until ready to use. The sauce will keep for several months & can also freeze it. This sauce is also perfect for chicken, pork & even over steaks).

    After 1 1/2 hour is up, put some BBQ Sauce on top of ribs (not slathered & no need for saucing the bottom of ribs), then turn over & cook additional 1/2 hour. Take off when done. When serving...slather with lots of Coca-Cola BBQ Sauce & enjoy!
