chef monica's recipe for mr. joey's 12 pound butt!
This is a long slow process but well worth the effort. The most time really is peeling the garlic cloves so cut some time in prep by getting a jar of peeled garlic toes. I make Jack Daniels BBQ sauce and serve on Hawaiian Rolls. Yummy!!

3 mdclementines

1/4 cgarlic powder

1/4 cbrown sugar, light

1/4 ccreole seasoning

1/4 cpaprika

16 clovegarlic
-
1/4 colive oil, extra virgin

12 lbboston butt roast

1Rinse roast and pat dry with paper towels

2Combine all other ingredients except garlic in a bowl. Mix well. Set aside

3Start on the side without the fat! Using knife, put a hole in roast and turn handle to make an opening. Insert garlic cloves. Have fun. Be creative.

4Rub with 1/3 olive oil and squeeze juice of 1 clementine before rubbing in 1/3 of the dry mix.

5Rub dry mix all over Mr. Joey's Butt!

6Refrigerate roast for 3-4 hours. Remove about an hour before placing roast in preheated 250 degree oven.

7Roast for 10-12 hours until internal temperature reaches 180 degrees
