cheesy bacon and hominy casserole

I have been wanting to do something with hominy for awhile now, so at work today while waiting for phone calls, I concocted this recipe. I think it will be very good. Please try it and tell me what you think!

Ingredients For cheesy bacon and hominy casserole

2 can(15.5 oz. ea.) golden or white hominy

6 slicebacon, cooked and crumbled

1 lgshallot, sliced
-
1 clovegarlic, minced
-
4 Tbsp(1/2 stick) butter
-
1/2 tspsalt
-
1/4 tsppepper
-
4 Tbspall purpose flour
-
1 chalf and half - or -
-
1 can(12 oz.) evaporated milk

1 1/2 cshredded cheddar cheese, divided
How To Make cheesy bacon and hominy casserole

1Drain and rinse hominy; set aside.

2Cook bacon and crumble; set aside.

3Peel and slice shallots. Peel and mince garlic.

4In a medium saucepan melt butter over medium-high heat. Add the sliced shallots, minced garlic, salt and pepper and cook for 2 or 3 minutes, stirring frequently. Stir in the flour and blend well.

5Add the half-and-half or milk gradually, and stir constantly until mixture begins to thicken, about 5 minutes.

6Blend in 1 cup of the cheese and stir until melted.

7Add the hominy and mix thoroughly. Place the mixture into a lightly buttered 2-qt. baking dish. Bake, covered, in a preheated 350-degree oven for 30 minutes.

8Remove cover and sprinkle on the crumbled bacon, followed by 1/2 cup cheese.

9Continue baking, uncovered, for 15 minutes or until cheese is melted. Serve immediately.
