older folks need calcium and when ya don't drink milk like me i try and find way to get it in me in the healthiest ways.... fat free cottage cheese works... kinda like lasgna meat if fact i bout named this lasgna meatloaf

Ingredients For cheesey meatloaf

  • 3/4 lb
    lean ground beef
  • 3/4 lb
    fresh pork sausage
  • 1/2 sleave whole wheat saltine crackers
  • 2/3 c
    mixed color bell peppers
  • 1 pkg
    [24 oz tub] fat free cottage cheese
  • 2 lg
    eggs
  • 2 c
    ketchup, divided
  • 1 Tbsp
    onion powder
  • 1 Tbsp
    garlic powder
  • 1 Tbsp
    italian spice blend
  • 12/3 tsp
    oregano, dried
  • 1 tsp
    dried celery leaves
  • 1 Tbsp
    dried parsley flakes
  • 1 pinch
    red pepper flakes
  • slice
    provolone cheese
  • 1 tsp
    dried chives

How To Make cheesey meatloaf

  • 1
    first put saltines in food processor mix til fine remove put in lg bowl next put 1/2 beef,1/2 pork and 1/2 cottage cheese in food processor mix til well blended add 1 egg mix well add to bowl with crackers... do same with other 1/2 of the same stuff

    now mix all dry spices except for chives into small bowl add to meat mix,add 1/2 the ketchup and bell peppers mix well cover with foil put in fridge let set all afternoon

    pre heat oven to 375 put meat into round pyrex dish[make sure dish is big enough to add stuff to top] put foil on top bake for 45 min add rest of ketchup replace foil bake 25 min more remove foil add sliced cheese and chives bake 10 min more or til done let rest bout 10 min before servin in wedges
