Ingredients For chalupa

3 lbs. pork loin roast or boneless shoulder

1 lb. pinto beans
-
2 cloves garlic, chopped
-
2 tbsp. chili powder
-
1 tbsp. cumin, ground
-
1 tsp. oregano
-
1 can green chiles, chopped, 27 oz
-
3 tsp. salt or to taste
-
fritos
-
grated cheese
-
shredded lettuce
-
onions
-
diced tomatoes
-
diced avocados
-
salsa to taste
How To Make chalupa

1In large pot, pout pork roast, pinto beans, garlic, chili powder, cumin, oregano, chopped chiles and salt. Cover with water; cook for 6 hours or til beans are tender.

2Remove roast and all fat and bone. Shred meat. Put meat back in bean mixture, cook for 1 hour more without lid to thicken.

3Serve over Fritos with grated cheese, shredded lettuce, onions, diced tomatoes, diced avocados and salsa to taste.
