My friend and co-worker, Carol, ran a bed and breakfast and also served dinners for special occasions for friends, like anniversaries, etc. She shared this recipe with me and I have made it several times. The amounts of ingredients are mine since Carol's recipe was a thrown together one that she used. I have made it many times over the years and I think of Carol each time.

Ingredients For carol's harvest chops

    center cut pork chops
  • 1 Tbsp
    oil for browning
  • 4 tsp
    horseradish sauce or more to taste
  • 2
    eating apples, peeled and sliced
  • 1 sm
    onion, sliced
  • 1 c
    sauerkraut, rinsed and drained
  • salt and pepper to taste

How To Make carol's harvest chops

    Brown the pork chops until brown on both sides in oil with salt and pepper to taste (try to eliminate salt when I can and since the sauerkraut is a bit salty to me, I don't put salt in this, but you may feel you want it). Put in large baking pan and to the top of each add horseradish, divided and spread on each. Saute sliced apple and sliced onion until soft and mix in rinsed and drained sauerkraut; add to top of pork chops and bake at 350 until done. Baking depends on the thickness of your pork chops so check often after 20 minutes.
