Ingredients For caribbean pork and pineapple

12 ozpork loin, cut into 1" cubes

2 Tbspflour

1 Tbspcanola oil

1onion, sliced
-
1 lggreen bell pepper, chopped

1 tspminced garlic
-
1chile peppr, minced
-
1 Tbspworcestershire sauce

1/2 tspground ginger
-
18 oz can pineapple sliced w/ juice

1tomatoe, seeded and diced
-
1/2cucumber, peeled, diced

salt and pepper to taste
How To Make caribbean pork and pineapple

1Toss pork in flour in a bowl. Add oil to a lg skillet, place over medium-high heat. Brown pork cubes.

2Transfer pork to a plate. Saute onion, pepper, garlic and chile pepper until onion is soft. Return pork to pan. Add 1 cup water, worcestershire sauce, ginger, a pinch of salt, and a pinch of pepper.

3Drain pineapple juice into pan. Cover, reduce heat. Simmer 30 mins. Stack pineapple and cut into 8 sections. Add pineapple, tomato and cucumber to pan. Simmer, uncovered 10 mins, stirring occasionally. Best serve over rice.
