camp rice in the instant pot
Camp Rice has become one of our favorite dishes. It can be either a side dish or the main course. The recipe originally came from a book on camping. Over 50 years ago I adapted the recipe to one I could use in the kitchen. Then 30 years ago I changed the recipe so I could cook it in a rice cooker. Now I have made some adaptations so I can cook it in the Instant Pot. With the Instant Pot I am able to cook this in just one pot. This is one of our favorite recipes and now it is easier and much quicker to make.

Pressure Cooker/Instant Pot
Ingredients For camp rice in the instant pot

2large onions, chopped

a fist size chunk of salt pork or bacon, chopped

1 clong grain rice, uncooked

1 lgcan tomatoes, about a quart

1 Tbspsugar

1 tspcelery seeds
-
1/4 tspblack pepper

1 ccheddar cheese, shredded
How To Make camp rice in the instant pot

1Set Instant Pot to SAUTE. When the Instant Pot has heated up add the salt pork and cook for about 4 minutes stirring every 30 seconds or so.

2Add the chopped onions and cook another 4 or 5 minutes stirring every 30 seconds or so.

3Puree the tomatoes in a blender and add them to the Instant Pot along with rice, sugar, celery seed, and black pepper. Give a quick stir to incorporate the ingredients together.

4Close the Instant Pot lid and push the RICE button. (Cooking rice is one of the programs available for the Instant Pot.)

5After pressure cooking has finished allow the cooker to cool down naturally until the float valve drops down, this will take 10 to 15 minutes.

6Open the lid and spread the shredded cheese over the camp rice.

7Serve and enjoy.
