Got this recipe from over the open fire cook book.when I made this for a group of campers while on our vacation,I wanted to add a little bite to it. Every one love it and no left overs.

Ingredients For cajun sausage soup

1 lbandouille sausage

1 clovegarlic,minced

3 canchicken broth, low-fat

1 candark beer

1 large cantomatoes, canned italian-style and diced

1 ccarrots, diced

1 cgreen beans,sliced

1 cankidney beans, canned

1 cokra,frozen
-
2 stickcelery ribs,diced

1 ccabbage,cut bite size

1/4 tspsalt and pepper
-
2 Tbsphot sauce
-
1 1/4 cwhite wine, dry,or simi dry

1 Tbspfreash parsle and thyme

1 mdonion diced
-
1 clong grain rice, uncooked
How To Make cajun sausage soup

1You will need a 12" cast iron skillet and a 14" deep dutch oven... In the skillet brown sausage with garlic,and oinon.With some bacon drippings or olive oil.on med-high heat.

2transfer to the dutch oven stir in broth,beer,tomatoes,green beans carrots,celery,parsley,thyme,salt and pepper,hot sauce,and sliced green onions...Cover and bring to a boil over high heat..Then move to med heat and simmer 15 to 20 min.stering a few times...

3Now srir in beans and wine: add okra,cabbage,and rice..Stir to mix.. Cover and simmer another 20 to 30 min.serve hot in soup cups.
