i lov cranberries and they go so well with pork...and i like gettin sweetness from other fruits...these go well with scalloped potatoes with mushrooms

Ingredients For butterflied pork with cran/mango sauce

  • about lb
    [2 butterflied] boneless pork chops
  • 1/2 lb
    fresh or frozen cranberries
  • 1 c
    fresh/frozen mango
  • 1/2 sm
    onion,chopped fine
  • 1/2 md
    green bell pepper,chpped fine
  • 1 tsp
    garlic pieces
  • 1/2 tsp
    dried chives
  • 1 stick
    margarine ,divided
  • 1/2 can
    jellied cranberry sauce

How To Make butterflied pork with cran/mango sauce

  • 1
    put 2 tablespoons butter and put in microwave safe bowl add onion and bell peppers nuke 5 min stir well.... keep nukin 1 min at a time til onion soft...set aside to cool

    mix jellied cranberries ,frsh/frozen cranberries and mango in med bowl melt margarine mix into fruits...add garlic,and onion/pepper mix stir well

    pound chops to bout 1/4 in thickness...pour 1/2 the sauce in bottom of round 8 in cake pan...take a couple spoonfuls of sauce and spred over pork...roll meat up like jellyroll..put in pan... put rest of sauce on top of meat lettin it run down side of meat

    cover with foil...bake at 350 for 45 min.... roll each piece of meat over spoon sauce over all.put back in oven without foil...bake bout 20 min more..let rest bout 10 min before servin

    this goes great with mushroom/scalloped potatoes and steamed brocolli
