This a recipe that my son wants to make with him.. So i thought I would make this first.. It is sooo good..Will be making this a lot... Added mushrooms to his.. Taste even better.

Ingredients For breakfast club sandwich

  • 6 slice
    bacon thick cut
  • 3 Tbsp
    butter, unsalted
  • 4 lg
    eggs
  • 4 slice
    bread, whole wheat
  • 2
    med. tomatoes
  • 1 lg
    avocado sliced lenthwise
  • salt and pepper
  • spicy mayo
  • 4 oz
    mushrooms( button) sliced & sauted

How To Make breakfast club sandwich

    for spicy mayo: stir 1/4 cup manonnaise,2 tablespoons ketchup,1 teaspoon hot sauce, mix well.

    In a cast iron skillet (or heavy skillet)cook bacon till almos chrisp. Drain on papper towl...Add sliced mushrooms and saute... drain all but 1 teaspoon bacon drippings add butter. cook eggs, salt & pepper to taste..( cook the way you like).. I cook mine 3 min on one side & 1 min on the other...

    Toast bread, then spread with spicy mayo on two slices. top each with 2 eggs & 3 slices of bacon,add a few mushrooms, and sliced tomato,,top with avocato. I spread a little mayo on top slice of bread and put on top on sandwich ...Serve warm..
