Ingredients For boston butt cajun style

3 Tbspolive oil

14 lb boston butt
-
1head of galic (i used 8 cloves)

salt and pepper
-
2 Tbspmr. pete's cajun seasoning

1 mdonion, sliced
-
1 1/2 cchicken broth
-
juice of a lemon
-
1/4 chot sauce, i used louisiana hot sauce

1/4 capple cider vinegar
-
2 Tbspketscup
-
2 Tbspmustard
How To Make boston butt cajun style

1Be sure to check out Mr. Pete's Seasonings: http://www.mrpetescajunspices.com/store/

2Preheat oven to 300 degrees.

3Remove roast from fridge; generously salt and pepper the roast and let sit at room temperature for at least 30 minutes.

4With a small paring knife, make incisions deep enough all around the butt to insert a clove of garlic into each. NOTE: I used 8 cloves.

5Heat olive oil over med/high heat until good and hot. Sear roast on both sides about 2 minutes on each side.

6Generously sprinkle Mr. Pete's Cajun Seasoning all over roast.

7Lay onion slices on top of and around roast. Mix remaining ingredients and pour around roast.

8Cover pot with a tight fitting lid. Place in oven for 4 to 5 hours and cook until it falls apart. Adjust time for a larger roast. Serve with your favorite veggies or shred for BBQ sammie.
