I like to make this on new years day instead of the traditional black eyed peas.

Ingredients For black-eyed pea casserole

2 (15 oz) canblack eyed peas -- drained
-
1 smonion -- chopped
-
1 lbhot pork sausage -- browned
-
1 canrotel tomatoes
-
2 boxjiffy cornbread mix
-
chedder cheese -- shredded
How To Make black-eyed pea casserole

1Brown your sausage, onions, and set aside.

2Mix peas, rotel, and sausage mixture together in a casserole dish.

3Mix cornbread mix per directions and pour over top of mixture.

4Place in 350 degree over and bake until corn bread is done.

5Remove from oven and cover liberally with cheese. Place back in oven and melt cheese.
