Our awesome dinner today was made using leftovers, in a creative way, by adding a few other ingredients. I made a Garlic Seasoned Beef Filet, the other day that I purchased at Sam's Club, had quite a bit left over, and also had a few slices of a boneless Pork Loin Roast left over. Combined the two by slicing them into strips, and made a delicious tasting FAJITA MEAL that could have served 6 people. Added the sweet peppers, onions, & seasoning, and wrapped them in a large flour tortilla and we had a very tasty dinner. Not a bad use of left overs, when they are this tasty.

Ingredients For beef & pork fajitas [remix]

  • 1 lb
    cooked beef, sliced into strips(approximate)
  • 1 lb
    sliced pork roast (sliced into strips)approximate
  • 1 pkg
    14 oz. large size flour tortillas (6 pack)
  • 1 lg
    red bell pepper, sliced into strips
  • 1 lg
    green bell pepper, sliced into strips
  • 1 lg
    onion, sliced & rings separated
  • 2 pkg
    fajita seasoning packets
  • 1 1/2 Tbsp
    olive or canola oil
  • 2 Tbsp
    butter
  • 2/3 c
    water

    For this recipe I used pre cooked beef & Pork, but you can also use chicken or ground beef or any meat of your choice. This was a way for me to use my left over Seasoned Beef Filet, and Center Pork Loin Roast. So use what ever you have on hand.
  • Prepping everything ahead of times makes your dinner come together quickly.

    Wash & Cut the red and green bell peppers into strips, as well as slice the onions into thick slices but separate the rings. Cut the beef & pork also into nice size strips.

    Add the olive or canola oil and butter to a 12 inch skillet and heat over medium high heat. Then add the sliced peppers and onions.
  • Saute` the veggies and then remove them from the skillet till ready to assemble everything together.

    Cook till crisp tender, then remove from skillet.
  • Adding the seasoning packets gives it just the right amount of flavor.

    Add sliced meat to same skillet, then add the seasoning packets and water, cook and allow to simmer for about 3 to 5 minutes or until heated through.
  • A skillet full of goodness, ready to be wrapped in a warm large tortilla. Meats both Beef fillet, and Pork Loin Roast combined together with peppers & onions and seasoning to make a great tasting meal.

    Add the vegetables back into the skillet with the meat and stir to mix together, and allow to simmer over low heat.

    Fill large tortilla with a generous serving of the meat mixture, fold and wrap and serve as desired, adding additional condiments if desired. Makes 6 generous servings.
